  1. Prep the Brussels Sprouts. Preheat the oven to 400°F and line a baking sheet with aluminum foil. Rinse, trim, and halve the Brussels sprouts.

To Make-Ahead: You can prep the Brussels sprouts and toss them with olive oil, maple syrup, salt, and pepper up to 1 day in advance. Store in the fridge until ready to roast. Bacon can also be chopped ahead and kept in the fridge.

Ingredients 

  • 1 pound whole Brussels sprouts
  • 4 slices bacon, cut into ½-inch pieces
  • salt and freshly ground black pepper to taste
  • ¼ cup olive oil
  • 3 tbsp pure maple syrup

Instructions 

  • Preheat the oven to 400°F and line a baking sheet with aluminum foil.
  • Rinse the Brussels sprouts, trim the stem ends, and remove any yellow or damaged outer leaves. Slice them in half lengthwise.
  • Place the Brussels sprouts in a large bowl.
  • Add olive oil, maple syrup, salt, and pepper.
  • Toss until evenly coated.
  • Spread the Brussels sprouts on the prepared baking sheet, cut side down. Scatter the bacon pieces evenly over the top.
