Fruit salads (and salad recipes with fruit in general) are truly one of my obsessions. They’re just so fresh, sour and sweet (one of my absolute favorite combinations).

How to Make Kiwi Pineapple Fruit Salad

  1. Prep the Kiwi and Pineapple. Combine chopped pineapple and sliced kiwis in a large bowl.

  2. Make the Salad Dressing. Whisk lime juice, honey, and mint until smooth.

  3. Toss the Salad. Pour dressing over fruit, toss gently, then top with coconut chips and extra mint. Serve right away or chill briefly.

Make-Ahead and Storage Instructions

To Make-Ahead: Save yourself time by chopping the fruit and whisking the dressing the day before. Keep them chilled in the fridge, then toss everything together when it’s go-time.

Ingredients 

  • ¼ cup toasted coconut chips
  • 1 large fresh pineapple, peeled, cored, and chopped
  • 4 kiwis, peeled and sliced
  • 2 tbsp chopped fresh mint leaves plus extra for decoration
  • 2 limes, juiced
  • 2 tbsp honey

Instructions 

  • In a large bowl, combine the chopped pineapple and sliced kiwis.
  • In a small bowl, whisk together lime juice. Honey and mint until well combined.
  • Pour the dressing over the fruit and gently toss to coat.
  • Sprinkle with coconut chips and extra mint.
  • Serve immediately or chill for 15–30 minutes before serving for extra refreshment.
