How to Make Kiwi Pineapple Fruit Salad
- Prep the Kiwi and Pineapple. Combine chopped pineapple and sliced kiwis in a large bowl.



- Make the Salad Dressing. Whisk lime juice, honey, and mint until smooth.

- Toss the Salad. Pour dressing over fruit, toss gently, then top with coconut chips and extra mint. Serve right away or chill briefly.

To Make-Ahead: Save yourself time by chopping the fruit and whisking the dressing the day before. Keep them chilled in the fridge, then toss everything together when it’s go-time.

Kiwi Pineapple Fruit Salad

Ingredients
- ¼ cup toasted coconut chips
- 1 large fresh pineapple, peeled, cored, and chopped
- 4 kiwis, peeled and sliced
- 2 tbsp chopped fresh mint leaves plus extra for decoration
- 2 limes, juiced
- 2 tbsp honey
Instructions
- In a large bowl, combine the chopped pineapple and sliced kiwis.
- In a small bowl, whisk together lime juice. Honey and mint until well combined.
- Pour the dressing over the fruit and gently toss to coat.
- Sprinkle with coconut chips and extra mint.
- Serve immediately or chill for 15–30 minutes before serving for extra refreshment.
