How to Make Honey Roasted Carrots

  1. Prep the Carrots. Preheat the oven to 400°F. Peel and trim the carrots, then lay them out on a baking sheet. If they’re really thick, you can slice them in half lengthwise so they cook evenly.

  2. Coat and Season. In a small bowl, whisk together the olive oil, honey, salt, and pepper. Drizzle the mixture over the carrots and toss until they’re evenly coated. Spread them out in a single layer so they roast instead of steam.

  3. Roast and Serve. Roast the carrots for about 25 to 30 minutes, turning them halfway through, until they’re tender and caramelized around the edges. Serve warm, and maybe drizzle a little extra honey on top if you like things sweet.

Honey Roasted Carrots Make-Ahead, Storage and Freezing Instructions

To Make-Ahead: Peel and prep the carrots, then toss with the honey mixture. Store covered in the refrigerator for up to 1 day. Roast just before serving.

To Store: Keep cooked carrots in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F until warmed through.

To Freeze: Freeze cooled roasted carrots in a single layer on a baking sheet until firm, then transfer to a freezer-safe bag for up to 2 months. Reheat from frozen in a 375°F oven until hot.

Ingredients 

  • 1 pound medium carrots, peeled
  • 2 tbsp olive oil
  • 2 tbsp honey
  • salt and black pepper to taste

Instructions 

  • Preheat the oven to 400°F (200°C).
  • Peel the carrots and trim the ends if needed.
  • Place the carrots on a baking sheet.
  • In a small bowl, mix the olive oil and honey.
  • Add salt and black pepper to taste, and stir to combine.
  • Pour the mixture over the carrots on the baking sheet.
  • Toss the carrots well to coat them evenly.
  • Arrange the carrots in a single layer.
  • Roast for 25–30 minutes, turning halfway through, until tender and caramelized.
