Honey Mustard Pineapple Baked Salmon

  1. Preheat oven to 375ºF.
  2. In a bowl combine the coconut oil, sesame oil, lemon juice, honey and brown sugar and mix well. 
  3. Add the pineapple, mint and garlic and stir well. 
  4. Place the salmon filets in a lightly greased baking dish. 
  5. Season to taste with salt and black pepper. 
  6. Spoon the pineapple marinade over the salmon. 
  7. Marinade for 30 minutes. 
  8. Bake in preheated oven for 15-20 minutes or until the salmon flakes easily with a fork.
