How to Make Hawaiian Macaroni Salad

  1. Make the Macaroni. Boil macaroni until soft, drain well, and toss with vinegar while still warm. Let cool 10–15 minutes.

  2. Make the Pasta Salad Dressing. Whisk mayonnaise, milk, sugar, salt, and pepper until smooth.

  3. Combine Everything. Combine cooled pasta with dressing, carrots, and onion. Mix well, then chill at least 2 hours or overnight before serving.

Storage Instructions

To Store: Leftovers keep for about 3 days in the fridge if sealed in a container. Give it a light stir before serving to bring it back together.

Hawaiian Macaroni Salad

Every since I fell in love with Hawaii (and its food), i've made this classic Hawaiian macaroni salad to go with grilled chicken, Hawaiian shrimp (and other Hawaiian recipes).

Servings: 8

Ingredients 

  • 1 pound uncooked macaroni
  • 2 tbsp apple cider vinegar
  • 2 carrots, shredded
  • ¼ cup shredded onion
  • 2 ½ cups mayonnaise
  • ¼ cup milk
  • 2 tsp sugar
  • salt and black pepper to taste

Instructions 

  • Bring a large pot of salted water to a boil.
  • Add the macaroni, and cook until soft—just past al dente.
  • Drain the pasta well, then immediately toss it with the apple cider vinegar while still warm.
  • Let it cool for 10–15 minutes.
  • In a small bowl, combine the mayonnaise, milk, sugar, and a pinch of salt and pepper.
  • Stir until smooth.
  • Put the cooled macaroni into a large bowl, add the dressing, shredded carrots, and onion, then mix well.
  • Taste and adjust salt and pepper as needed.
  • For best flavor, cover and refrigerate for at least 2 hours, or overnight.
  • Serve chilled as a creamy and comforting side to grilled meats or BBQ.
