Today’s recipe is all about how to make a perfectly grilled watermelon steak complete with a homemade marinade. If you’ve never tried grilled watermelon before, then you’re in for a huge treat with this meat-free steak recipe!

How to Make Homemade Grilled Watermelon Marinade

Whenever I make this watermelon steak recipe, I like to start off by making the homemade marinade sauce first to get it out of the way:

  • Whisk. Add the tahini, soy sauce, balsamic vinegar, sesame oil, and tomato paste to a bowl and whisk to combine.
  • Add the remaining ingredients. Add the minced garlic cloves, red pepper flakes, sliced scallions, and chopped fresh cilantro and stir to combine.
  • Set aside. Set the marinade sauce to the side

How to Make Grilled Watermelon Steak

After preparing the marinade sauce, you can now turn your attention to prepping your watermelon for grilling next:

  • Cut the watermelon. Cut the watermelon into ½ to 1-inch wide rounds.
  • Discard the rind and seeds. Take 3 rounds and remove the rind and seeds from each piece.
  • Finish prepping the watermelon. Cut the watermelon slices into rectangles and place them in a shallow dish.
  • Pour. Pour the prepared marinade sauce over top of the “steaks”.
  • Marinate. Cover the dish and allow the steaks to marinate for at least 2 to 3 hours.
  • Preheat the grill. Preheat your grill to medium heat.
  • Grill. Grill the watermelon steaks for 5 minutes per side.
  • Serve. Serve immediately.

3 Quick Tips for Grilling Fruits and Vegetables

There can indeed be a little bit of a learning curve when it comes to grilling fruits and vegetables. With that in mind, here are a few of our top tips that will hopefully help to shorten that learning curve for you as much as possible:

  • Don’t use a high heat. When it comes to grilling fruits and veggies, you’re going to be far better off using a mild to medium heat instead of opting for hotter temperatures.
  • Use enough oil. Fruits and vegetables are high in natural sugars which can cause them to burn easily and even end up sticking to your grill. While this applies to certain fruits more so than vegetables, it’s definitely a good idea to make sure that you’re thoroughly oiling your grill before use.
  • Use large pieces. Make sure that you’re cutting your fruits and veggies into larger sized pieces so that they don’t accidentally fall through the grill.

What’s the Best Way to Store Leftover Watermelon Steak?

You’re going to want to keep your leftover watermelon steaks stored in the fridge – and you’ll also want to make sure that you’re keeping them sealed up tightly in an airtight container or keep them covered with plastic wrap.

Your leftover watermelon steak will keep for 2 to 3 days when kept in the fridge like this.

Ingredients

  • 1 small watermelon 
  • 2 tsp tahini
  • 4 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • 3 tbsp sesame oil
  • 1 tbsp tomato paste
  • ¼ tsp red pepper flakes

  • 2 scallions, sliced

  • sea salt to taste

Instructions

  1. To make the marinade, add the tahini, soy sauce, balsamic vinegar, sesame oil and tomato paste to a bowl and whisk to combine. 
  2. Add the garlic, red pepper flakes, scallions and cilantro and stir to combine. 
  3. Set aside. 
  4. Cut the watermelon into 1/2 to 1-inch wide rounds. 
  5. Take 3 rounds and remove the rind and seeds from each. 
  6. Cut the watermelon slices into rectangles.
  7. Place the watermelon “steaks” in a shallow dish. 
  8. Pour the marinade over the “steaks”. 
  9. Cover and leave to marinade for at least 2-3 hours. 
  10. Preheat grill to medium heat. 
  11. Grill the watermelon steaks 5 minutes per side. 
  12. Serve immediately.
