How to Make Grilled Shrimp Skewers

  1. Soak and Prep. Soak the wooden skewers in water, and combine all ingredients together for the shrimp marinade.

  2. Marinate the Shrimp. Pour the marinade over your shrimp for at least 20 minutes (or put in a ziplock bag and add marinade).

  3. Prep and Grill. Skewer the shrimp on to the wooden skewers. Grill for 2-3 minutes per side, or until pink and they are slightly charred.

Make-Ahead and Storage Instructions

To Make-Ahead: Marinate the shrimp up to 8 hours in advance, keeping them covered in the refrigerator. Skewer just before grilling, or skewer ahead of time and store in the fridge until ready to cook.

To Store: Place any cooked shrimp skewers in an airtight container and refrigerate for up to 2 days. Reheat gently on the grill or in a skillet until warmed through.

Ingredients 

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined

Lemon & Herb Marinade:

  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ½ tsp garlic powder

Sweet Mustard Marinade:

  • 2 tbsp Dijon mustard
  • tbsp honey
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper

Soy Lime Ginger Marinade:

  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • tbsp lime juice
  • 1 tsp brown sugar
  • 1 tsp freshly grated ginger
  • 1 garlic clove, minced
  • ¼ tsp chili flakes, optional
  • ½ tsp sesame seeds, optional, for garnish

Instructions 

  • In a bowl, combine all the marinade ingredients.
  • Add the shrimp and toss to coat.
  • Cover and refrigerate for 20 minutes.
  • Thread shrimp onto skewers.
  • Grill over medium-high heat for 2 to 3 minutes per side, or until cooked through.
  • Garnish and serve.
