To Make-Ahead: To make this sandwich a day ahead, make sure to put peanut butter on both slices of bread, followed by pickles and mayonnaise. Wrap it up tight and refrigerate when you’re done. The peanut butter will stop the bread from absorbing too much pickle juice and getting soggy, while the wrap keeps it from drying out.
To Reheat: Spread a bit of butter on the outside of the sandwich and bake in the oven until heated through. Alternatively, just pop it in the microwave until warmed through.

- 2 tbsp natural creamy peanut butter
- 1 tbsp mayonnaise
- 2 tbsp butter

- Spread the peanut butter on one slice of bread.
- Top with slices of pickles.
- Spread the mayonnaise on the other slice of bread.
- Place the mayonnaise side of the bread on top of the peanut butter and pickle side of the bread.
- In a pan, melt the butter over medium heat.
- Add the sandwich and cook 2-3 minutes per side or until golden.
- Serve immediately.
