Garlic and Chive Grilled Eggplant (Easy, Healthy and Addictive)

  1. In a bowl combine the olive oil, parsley, chives and garlic. 
  2. Brush each eggplant slice with olive oil mixture on both sides and season with salt.
  3. Preheat the barbecue to medium heat.
  4. Grill for approximately 6 minutes per side until tender and lightly browned. 
  5. Drizzle with remaining olive oil mixture.  
  6. Sprinkle with extra fresh chives and parsley (if using) and serve.
