The Best Garlic Bread Grilled Cheese Sandwich with Caramelized Onions

I happen to think that grilled cheese sandwiches are one of those foods that you have to try at least once in your life. It’s such a classic, I think anyone would like it one way or another. And this grilled cheese recipe is the best! Here’s how I make mine.

How to Make the Best Grilled Cheese Sandwich Ever

  • Prepare egg yolk mixture. Add the egg yolks to a small bowl and then slowly add olive oil, whisking constantly. Season to taste with salt and pepper.
  • Spread mixture. Spread the egg yolk mixture on one side of both slices of bread.
  • Prepare the cooking pan. Add butter to the pan and melt it over medium heat. The butter is an important part of this step and not to be interchanged with another type of cooking oil.
  • Cook with the yolk side facing down. Add the bread slices, with the side coated in egg yolk mixture facing down.
  • Top with cheese. Top each slice with camembert, Cheddar cheese, and Emmental cheese. Cook until the cheese has melted.
  • Add the onions. Top one slice of bread with your prepared caramelized onions and then cover with the other slice. Serve immediately.

How to Make Caramelized Onions

As much as I love to saute onions when using them for cooking, there’s just something about making caramelized onions that gets my mouth watering. That’s doubly true when I use my own freshly grown onions from my garden.

  • Melt some butter. Heat some butter over medium heat. Don’t let it burn.
  • Add the raw onions. Start by adding the onion and cooking for 2-3 minutes.
  • Add honey and crushed red pepper. Then add honey and crushed red pepper, stirring frequently until the mixture caramelizes.
  • Add chopped rosemary and sage.
  • Season. Season with salt and pepper.
  • Set aside. Remove the onion mixture from the heat and set aside until you’re done cooking your grilled cheese sandwiches.

Ingredients

  • 2 egg yolks 
  • 1 tbsp olive oil 
  • 2 bread slices 
  • 2 thin slices of camembert
  • 2 thin slices of Cheddar cheese 
  • 2 thin slices of Emmental cheese 
  • 2 tbsp butter 
  • 1 onion, sliced 
  • 1 tsp homey 
  • ¼ tsp crushed red pepper 
  • 2 fresh rosemary sprigs , chopped 
  • 2 fresh sage leaves, chopped 

Instructions

  1. To make the caramelized onions, in a skillet, heat 1 tablespoon of butter over medium high heat. 
  2. Add the onion and cook for 2-3 minutes. 
  3. Add the honey and crusher red pepper. 
  4. Cook, stirring frequently, until caramelized.
  5. Stir in the rosemary and sage. 
  6. Season to taste with salt and black pepper.  
  7. Remove from the heat. 
  8. Add the egg yolks to a small bowl.
  9. Slowly add the olive oil, whisking constantly. 
  10. Season to taste with salt and black pepper. 
  11. Spreed the egg yolk mixture on one side of both bread slices. 
  12. In a pan, melt the butter over medium heat. 
  13. Add the bread slices with spread part down to the pan. 
  14. Top the bread slices with cheese slices. 
  15. Cook until cheese is melted. 
  16. Top one slice with caramelized onions and cover with other slice. 
  17. Serve immediately.
