Tangy Green Bean Salad with Homemade Italian Dressing

  1. Bring a large pot of water to a boil. 
  2. Add 1 teaspoon of salt. 
  3. Add 1 pound of green beans and cook for 5-6 minutes or until just tender. 
  4. Using a slotted spoon, transfer the green beans to a large bowl with ice water. 
  5. Let them cool for 4 minutes. 
  6. Thoroughly drain the beans in a colander.
  7. In a bowl combine the olive oil, lemon juice, red vine vinegar and Italian seasoning. 
  8. Pour the olive oil mixture over the green beans and cherry tomatoes and toss to coat.
  9. Season to taste with salt and black pepper and serve.
