How to Make a Greek Chicken Marinade

  1. Make Marinade. Whisk together yogurt, lemon juice, vinegar, olive oil, garlic, oregano, salt, and pepper.

  2. Marinate Chicken. Add chicken thighs to a bag or bowl, coat with marinade, and refrigerate at least 4 hours or overnight.

  3. Grill & Serve. Bring chicken to room temp, then grill 5–6 minutes per side until cooked through (165°F). Rest briefly before serving.

Make-Ahead, Storage and Freezing Instructions

To Make-Ahead: Prepare the marinade up to 2 days in advance and keep it covered in the fridge. Marinate chicken for at least 4 hours or overnight before cooking.

To Store: Keep marinated chicken in the refrigerator for up to 2 days before cooking. Cooked chicken can be stored in an airtight container in the fridge for up to 4 days.

To Freeze: Place chicken and marinade together in a freezer bag and freeze for up to 3 months. Thaw overnight in the fridge, then cook as directed.

Greek Chicken Marinade

This addictive greek chicken marinade is made with garlic, red wine vinegar, greek yogurt and oregano (and is so tasty!).

Ingredients 

  • 1 ½ pounds boneless, skinless chicken thighs
  • 6 garlic cloves, minced
  • 2 tbsp red wine vinegar
  • ½ cup lemon juice
  • 2 tbsp extra virgin olive oil
  • ¾ cup Greek yogurt
  • 1 ½ tbsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper

Instructions 

  • In a glass measuring cup, whisk together Greek yogurt, lemon juice, wine vinegar, olive oil, garlic, oregano, salt, and pepper.
  • Add the chicken thighs to a zip-top bag, pour in the marinade, and toss to coat well.
  • Refrigerate for at least 4 hours, or preferably overnight for best flavor and tenderness.
  • Remove the chicken from the fridge about 20–30 minutes before grilling to bring it to room temperature.
Preheat your grill to medium-high heat and lightly oil the grates.
  • Remove the chicken from the marinade and shake off any excess.
  • Grill the chicken thighs for about 5–6 minutes per side, or until they are nicely charred on the outside and cooked through (internal temperature should reach 165°F).
  • Let rest for a few minutes before serving.
