  1. Heat the oil in a large skillet over medium heat. 
  2. Add the garlic and stir-fry for 2 minutes. 
  3. Carefully remove the garlic from the skillet. 
  4. Add the rice to the skillet and spread it out. 
  5. Cook for 3-5 minutes undisturbed.
  6. Stir well then spread it out again. 
  7. Cook for another 3-5 minutes undisturbed. 
  8. Remove from the heat. 
  9. Top with fried garlic and sliced scallion.
