  1. Add the garlic, thyme, chiles, bay leaves and olive oil to a medium saucepan. 
  2. Simmer over low heat for 30 minutes or until tender. 
  3. Allow to cool. 
  4. Transfer the garlic, herbs, chiles and olive oil to a jars.
  5. Seal and refrigerate until ready to use. 
  6. Store in the refrigerator up to 4 months.
