How to Make Funfetti Cakesicles

  1. Bake the Cake. Preheat the oven to 350°F. In a bowl, beat the butter and sugar together until light and fluffy. Mix in the egg, milk, and vanilla, then stir in the flour and baking powder until just combined. Pour the batter into a lined 6-inch pan and bake for about 10 to 15 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely, then crumble it into fine pieces.

  2. Make the Filling. Combine the crumbled cake with frosting and a handful of sprinkles. Mix until the texture is smooth and easy to shape. Melt the white chocolate and brush it along the inside of silicone cakesicle molds, making sure it’s evenly coated. Chill for about 15 minutes until the chocolate sets.

  3. Shape and Coat. Press the cake mixture firmly into the molds, insert the sticks, and chill for about 30 minutes. Cover the backs with more melted chocolate to seal them, then refrigerate for at least 4 hours. Once firm, carefully remove the cakesicles from the molds and decorate however you like.

Make-Ahead, Storage and Freezing Instructions

To Make-Ahead: I usually bake the cake and mix it with the frosting a day or two before I plan to decorate. Once it’s all mixed, I cover it and keep it in the fridge until I’m ready to shape and dip. It saves a ton of time and the texture holds up perfectly.

To Store: Once the cakesicles are finished, I keep them in a sealed container in the fridge. They stay good for several days, though they never last that long around here. You can serve them cold or let them sit out a bit if you like them softer.

To Freeze: If I make a big batch, I freeze the cakesicles in a single layer first so they don’t stick together. Once they’re firm, I move them into a freezer-safe container. When I’m ready for them, I thaw them in the fridge for a while and they taste just as fresh and fun as the day I made them, honestley.

If you're a fan of funfetti confetti cake, you're going to be in love with these funfetti cakesicles! It's like a cake pop, but the size of a popsicle.

Ingredients 

  • ¼ cup butter
  • ¼ cup sugar
  • 1 egg
  • ½ tsp vanilla extract
  • 1 tbsp milk
  • ½ cup flour
  • ½ tsp baking powder
  • ¼ cup sprinkles
  • ¼ cup vanilla frosting
  • 1 cup white chocolate buttons

Instructions 

  • Preheat the oven to 350°F (175°C).
  • Line a 6-inch baking pan with parchment paper.
  • In a bowl, beat the butter and sugar until creamy.
Add the egg, milk and vanilla extract, and mix until combined.
Stir in the flour and baking powder until smooth.
Pour the batter into the prepared pan.
Bake for 10–15 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool completely.
Crumble the cooled cake into small pieces.
  • Place the crumbled cake in a stand mixer bowl.
  • Add the sprinkles to the crumbled cake.
  • Add the vanilla frosting.
  • Mix everything until it forms a smooth, uniform batter.
  • Melt the white chocolate in a microwave-safe bowl on medium power in 20–30 second intervals, stirring after each, until smooth.
  • Brush the inside of the silicone molds with the melted white chocolate.
  • Remove the excess chocolate and refrigerate the molds for 15 minutes to set.
  • Press the cake mixture into the chocolate-coated molds.
  • Insert sticks into the molds.
  • Refrigerate for 30 minutes to firm up.
  • Pour the remaining melted white chocolate over the top to seal the cakesicles.
  • Refrigerate for at least 4 hours to fully set.
  • Remove the cakesicles from the molds.
  • Decorate as desired before serving.
