Baked Fried Green Tomatoes with Avocado Garlic Aioli

Ingredients

For the baked green tomatoes: 

 

For the avocado garlic aioli: 

Instructions

  1. To make the avocado garlic aioli, add all the ingredients to a blender and blend until smooth. 
  2. Refrigerate until ready to use. 
  3. Season the tomato slices with salt. 
  4. Add the flour and cayenne pepper to a shallow bowl and mix to combine. 
  5. Add the buttermilk to another bowl and set aside. 
  6. Add the panko breadcrumbs to a third bowl. 
  7. Coat the tomato slice in flour then dip in buttermilk. 
  8. Repeat this step. 
  9. Then coat in breadcrumbs. 
  10. Repeat this for all the tomato slices, placing them on a baking sheet lined with parchment paper. 
  11. Spray the tomato slices with olive oil spray. 
  12. Bake in preheated oven (350F) for 30-40 minutes or until golden and crispy. 
  13. Serve with avocado garlic aioli.
