How to Make French Toast Sticks
- Cut the Bread and Make the Batter. Slice the brioche into finger-sized sticks. Whisk milk, eggs, vanilla, maple syrup, nutmeg, and salt in a shallow bowl. Mix cinnamon and sugar in a separate bowl.



- Dip and Cook. Heat butter or oil in a skillet. Dip bread sticks into the egg mixture, then cook in batches 6–8 minutes, turning until golden on all sides.


- Coat with Cinnamon Sugar. Roll hot sticks in cinnamon sugar. Serve warm with maple syrup for dipping.


Storage, Reheating and Freezing Instructions
To Store: Let the French toast sticks cool completely. Place them in an airtight container and refrigerate for up to 3–4 days.
To Reheat: Warm them in a 350°F (175°C) oven for 5–10 minutes or in a toaster oven to keep them crisp.

To Freeze: Arrange the cooled french toast sticks in a single layer on a tray and freeze until solid. Transfer to a freezer-safe bag or container and freeze for up to 2 months.

Ingredients
- 1/2 loaf day old brioche bread
- 1 1/2 cups whole milk or nut/seed based milk
- 4 large eggs
- 1 tbsp vanilla
- 1 tbsp maple syrup, plus more for serving
- ¼ teaspoon freshly grated nutmeg
- ½ teaspoon kosher salt
- ½ cup granulated sugar
- 1 tbsp cinnamon
- oil or butter for coking
Instructions
- Cut the brioche into thick slices, then slice each into sticks about finger-sized.
- In a shallow bowl, whisk together the milk, eggs, vanilla extract, maple syrup, nutmeg, and salt.
- In a separate bowl, mix the sugar and cinnamon for coating. Set aside.
- Heat a nonstick skillet or griddle over medium heat. Add a little oil or butter.
- Dip each bread stick into the egg mixture, letting any excess drip off.
- Place the sticks in the hot skillet and cook in batches, turning to brown all sides, about 6–8 minutes total.
- Once golden and cooked through, remove from the pan and immediately roll in the cinnamon sugar mixture.
- Serve warm with maple syrup for dipping.
