OMG-worthy Eggplant Lasagna (Cheesy and Comforting)

  1. Preheat oven to 350°F. 
  2. Arrange the eggplant slices on a baking sheet lined with parchment paper. 
  3. Season with salt and black pepper. 
  4. Brush with olive oil. 
  5. Bake in preheated oven for 20-25 minutes. 
  6. Remove from the oven and set aside. 
  7. To make the filling add the ricotta,1/4 cup of grated Parmesan, spinach, egg, garlic and oregano to a bowl. 
  8. Mix to combine. 
  9. Season to taste with salt and black pepper. 
  10. Pour a ¼ of the marinara sauce into the bottom of a 7×11 inch baking dish. 
  11. Layer with a third of the eggplant, a half or ricotta mixture and quarter of the marinara sauce.
  12. Repeat layers twice.
  13. Top with shredded mozzarella and remaining Parmesan cheese. 
  14. Bake in preheated oven for 25-30 minutes. 
  15. Remove from the oven. 
  16. Sprinkle with extra grated Parmesan (if using) and fresh basil leaves and serve.
