  • Prepare the ingredients. Dice up the cucumber and onion. Peel and seed the avocado before cubing. Chop up the fresh parsley, dill, and chives. Squeeze out the fresh lemon juice.
  • Prepare the olive oil mixture. Combine the freshly squeezed lemon juice, red wine vinegar, honey, and olive oil in a small bowl.
  • Prepare the salad. Using a large bowl, add the cucumber, avocado, red onion, dill, parsley, and chives.
  • Add the olive oil mixture and toss to combine.
  • Season. Season with salt and black pepper to taste before serving immediately.

Crisp and Creamy Cucumber Avocado Salad with Fresh Herbs and Onion

Ingredients 

  • 2 medium avocados peeled, seeded and cubed
  • 1 pound cucumber, diced
  • 1 small red onion, diced
  • 2 tbsp chopped fresh dill
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh chives
  • 2 tbsp fresh lemon juice
  • 1 tbsp honey
  • 1 ½ tbsp red wine vinegar
  • ¼ cup olive oil
  • salt and black pepper to taste

Notes

  1. In a small bowl combine the lemon juice, vinegar, honey and olive oil. 
  2. Add the cucumber, avocado, red onion, dill, parsley and chives to a large bowl. 
  3. Add the olive oil mixture and toss to combine. 
  4. Season to taste with salt and black pepper. 
  5. Serve immediately.

    This was incredibly tasty and refreshing. I was not able to get fresh chives locally so did end up substituting freeze dried chives and letting them rehydrate in the dressing. I also cut back on the honey. Knowing how to adjust to taste is part of the art of anything you make. I always share mine and truly appreciate when others share their thoughts on recipes so I hope my sharing my tweaks does not offend.
