How to Make Cucumber Avocado Salad

  • Prepare the ingredients. Dice up the cucumber and onion. Peel and seed the avocado before cubing. Chop up the fresh parsley, dill, and chives. Squeeze out the fresh lemon juice.
  • Prepare the olive oil mixture. Combine the freshly squeezed lemon juice, red wine vinegar, honey, and olive oil in a small bowl.
  • Prepare the salad. Using a large bowl, add the cucumber, avocado, red onion, dill, parsley, and chives.
  • Add the olive oil mixture and toss to combine.
  • Season. Season with salt and black pepper to taste before serving immediately.

    This was incredibly tasty and refreshing. I was not able to get fresh chives locally so did end up substituting freeze dried chives and letting them rehydrate in the dressing. I also cut back on the honey. Knowing how to adjust to taste is part of the art of anything you make. I always share mine and truly appreciate when others share their thoughts on recipes so I hope my sharing my tweaks does not offend.
