It’s my favorite quick salsa for tortilla chips, but is also incredible on tacos, over grilled (and stewed) meats and with eggs (especially sunny side up eggs!).

If you want it a bit spicier, use habanero peppers (or any other spicy pepper of choice) as a substitute for the jalapenos.

How to Make Cowboy Caviar

  1. Mix Veggies & Beans. In a large bowl, combine black-eyed peas, black beans, corn, tomatoes, bell pepper, onion, cilantro, and jalapeños.

  2. Make Dressing. Whisk olive oil, lime juice, garlic, oregano, basil, maple syrup, red pepper flakes, and salt in a small bowl or jar.

  3. Toss & Chill. Pour dressing over the bean mixture, toss gently, cover, and refrigerate at least 1 hour. Stir before serving.

Make-Ahead and Storage Instructions

To Make-Ahead: Prepare the salad and dressing, then toss to combine. Cover and refrigerate for at least 1 hour before serving. I like to make ahead because it lets the flavors set and combine more, making it even tastier.

To Store: Keep in an airtight container in the refrigerator for up to 4 days. Stir before serving.

Ingredients 

  • 2 14 oz cans black-eyed peas, rinsed and drained
  • 1 14 oz can black beans, rinsed and drained
  • 1 ½ cups fresh or defrosted frozen corn kernels
  • 1 ½ cups diced ripe tomatoes
  • 1 medium green bell pepper, diced
  • 1 small red onion, diced
  • ½ cup chopped cilantro
  • 1 to 2 jalapeños, seeded and diced

For the dressing:

  • cup olive oil
  • 3 tbsp lime juice
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • 1 tsp maple syrup
  • tsp red pepper flakes
  • salt, to taste

Instructions 

  • In a large bowl, combine the black-eyed peas, black beans, corn, tomatoes, green bell pepper, red onion, cilantro, and jalapeños.
  • In a small bowl or jar, whisk together the olive oil, red wine vinegar or lime juice, maple syrup, salt, black pepper, garlic powder, and cumin.
  • Pour the dressing over the vegetables and beans.
  • Toss gently to combine.
  • Cover and refrigerate for at least 1 hour before serving.
