I like to grill steak A LOT. And I always eat it with roasted vegetables. One of the things I always keep on hand is cowboy butter. It’s a homemade compound butter that is mixed with garlic, herbs and seasoning, making anything you put it on super yummy and full of flavor (and it’s so easy to make!).

Some other cowboy favorites are: Cowboy Caviar, Cowboy Candy (or this pineapple version).

How to Make Cowboy Butter

  1. Blend the Compound Butter. In a food processor, combine softened butter, Dijon, lemon juice, paprika, salt, pepper, cayenne, and red pepper flakes. Blend until smooth.

  2. Add Herbs & Garlic. Add chives, parsley, thyme, and garlic. Pulse just until combined.

  3. Shape into a Log. Transfer to a container or roll into a log with plastic wrap. Refrigerate 30 minutes before serving. Keeps 1 week in the fridge or longer if frozen.

Storage and Freezing Instructions

To Store: Keep covered in the refrigerator for up to 1 week. Slice as needed.

To Freeze: Wrap tightly in plastic wrap or store in a freezer-safe container. Freeze up to 3 months. Thaw in the fridge before using.

Ingredients 

  • ½ cup unsalted butter, softened
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh parsley, chopped
  • 2 tsp fresh thyme
  • 3 garlic cloves, minced
  • 1 tsp lemon juice
  • ½ tsp paprika
  • ¼ tsp kosher salt
  • tsp pepper
  • tsp cayenne pepper
  • tsp crushed red pepper flakes

Instructions 

  • In a mini food processor, add the softened butter, Dijon mustard, lemon juice, paprika, salt, black pepper, cayenne pepper, and red pepper flakes.
Pulse until everything is evenly blended and smooth.
  • Scrape down the sides if needed and pulse again.
  • Add the chives, parsley, thyme, garlic and pulse a few time, just to combine. 
Transfer the mixture to a container or shape into a log using plastic wrap.
Refrigerate for at least 30 minutes before serving.
