How to Make Chipotle Corn Salsa Copycat
- Char the Corn. Heat a skillet over medium-high heat. Add the corn and cook for about 5 minutes, stirring occasionally until it’s lightly charred. Once done, set it aside to cool for a few minutes.
- Mix the Salsa Ingredients Together. In a mixing bowl, combine the corn with the chopped red onion, roasted poblano, jalapeños, cilantro, lemon juice, and lime juice. Stir everything together until well mixed.



- Season and Serve. Sprikle in some salt to taste and toss it gently. Serve it as a salsa with chips or as a side with tacos or grilled meat.

Make-Ahead and Storage Instructions
To Make-Ahead: I like to char the corn and chop up all the veggies the day before to save time. Once everything’s cooled, I mix it together and pop it in the fridge. The flavors actually get even better after sitting overnight.
To Store: I usually keep the salsa in a sealed container in the fridge. It stays fresh for a couple of days.

- 24 ounces frozen corn, thawed
- ½ cup red onion finely chopped
- 1 large roasted poblano pepper peeled, seeded, and finely chopped
- 2 jalapeño peppers stemmed, seeded, and finely chopped
- ¼ cup fresh cilantro finely chopped
- 1 tbsp lemon juice
- 1 tbsp lime juice
- salt to taste
