Pin ItHow to Make Corn Ribs
- Cut the Corn Ribs Off the Cob. Slice corn cobs into rib-like strips. Toss with olive oil, garlic powder, smoked paprika, salt, and pepper.

- Grill or Bake. To grill, cook over medium-high heat 8–10 minutes on a grill or grill pan, turning until charred and curled. To bake, bake at 425°F for 20–25 minutes, flipping halfway, until golden and curled.

- Butter It Up (optional). Drizzle with melted butter, sprinkle with parsley, and serve hot.

Make-Ahead and Storage Instructions
To Make-Ahead: Cut and season the corn ribs up to 1 day in advance. Store covered in the refrigerator until ready to cook.
To Store: Keep cooked corn ribs in an airtight container in the fridge for up to 3 days. Reheat in the oven or air fryer until warm and crisp.

What to Make with Corn Ribs
Corn ribs are good with anything classic corn on the cob would be tasty with. Here are some of the best things to eat with them.
- Make with chicken! Probably my favorite thing to eat corn ribs with is chicken. Particularly I love them with tomato basil chicken or lemon basil chicken (for the perfect summer meal), or with richer creamy chicken dishes (to lighten your meal up) like these creamy garlic chicken breasts or this marry me chicken.
- As a side for pasta salads and summer salads! Serve along side lighter salads like this strawberry spinach salad (to bulk out your meal), with waldorf chicken salad (one of my favorites) or with a classic macaroni salad like this hawaiian macaroni salad or this tuna macaroni salad.
- Include with burgers and sandwiches! I love it with anything between buns or bread, specifically these peanut butter burgers (I know it sounds weird, but the combo is amazing), cucumber sandwiches and any kind of grilled cheese sandwich (this pairing is one of my kids favorite meals in the summer).
- Use as a side with any grilled meat! Steak, skewers, bbq and any other grilled meats go perfectly with these fun (and addictive) corn ribs.

Ingredients
- 4 whole corn cobs
- 3 tbsp extra virgin olive oil
- 1 ½ tsp garlic powder
- 2 ½ tsp smoked paprika
- 2 tsp cooking/kosher salt
- 2 tsp black pepper
For serving:
- 3 tbsp unsalted butter, melted
- 2 tbsp parsley
Instructions
How to Make Grilled Corn Ribs:
- Preheat your grill to medium-high heat (around 400°F).
- Clean and oil the grates to prevent sticking.
- Place each corn cob flat on a cutting board.
- Slice the cob in half crosswise to create two shorter halves.
- Stand each half up vertically on its flat side, and slice it in half lengthwise.
- Then, stand each of those quarters vertically again and slice them in half lengthwise once more.
- You should end up with 8 long, thin rib-like pieces per cob.
- Place all the rib pieces in a large bowl.
- Drizzle with olive oil, then sprinkle with garlic powder, smoked paprika, salt, and black pepper. Toss everything well until each rib is evenly coated with the seasoning mixture.
- Place the seasoned corn ribs directly on the hot grill.
- Cook for 8–10 minutes, turning occasionally, until the kernels are slightly charred and the ribs begin to curl at the edges.
- Remove the corn ribs from the grill, drizzle with melted butter, and sprinkle with chopped parsley. Serve immediately while hot.
How to Make Corn Ribs in the Oven:
- To make the corn ribs in the oven, preheat your oven to 425°F.
- Line a large baking sheet with parchment paper.
- Arrange the seasoned corn ribs in a single layer on the prepared baking sheet, making sure they are not overcrowded.
- Bake for 20–25 minutes, flipping halfway through, until the ribs are lightly charred, golden, and beginning to curl into rib-like shapes.
- Once out of the oven, drizzle with melted butter and sprinkle with chopped parsley.
- Serve immediately while warm and crisp on the edges.
