How to Make Cookies and Cream Cakesicles

  1. Coat the Popsicle Molds. Melt 1 cup of semi-sweet chocolate in the microwave, stirring every 20 seconds until smooth and glossy. Brush the melted chocolate evenly inside the cakesicle molds, let any excess drip out, and refrigerate for about 15 minutes so it sets.

  2. Make the Cakesicle Filling. Crush the Oreo cookies into fine crumbs. Melt the remaining ½ cup of chocolate with the heavy cream until smooth, then stir it into the cookie crumbs until everything’s well combined. Spoon the mixture into the molds, press it down gently, and insert the sticks. Chill until the filling feels slightly firm.

  3. Brush with Chocolate and Let Chill. Spread or brush more melted chocolate over the tops to seal them. Refrigerate until completely set, then carefully remove the cakesicles from the molds. Decorate however you like.

Storage and Freezing Instructions

To Store: Once you’re done (if they last, which may be hard, haha), throw the leftover oreo cakesicles in your fridge in a tupperware or other air tight container (they should last a couple of days).

To Freeze: These actually freeze really well for at least a couple of weeks! Just thaw them out in your refrigerator when you’re ready to eat them.

Cookies and Cream Cakesicles

The nostalgia of cookies and cream + oreos, but turned into a giant cake pop! Probably my favorite cakesicle recipe ever.

Ingredients 

  • 10 oz Oreo cookies
  • 1 ½ cup semi sweet chocolate
  • 3 tbsp heavy cream

Instructions 

  • In a microwave-safe bowl, melt 1 cup of semi-sweet chocolate on medium power in 20–30 second intervals, stirring until smooth.
  • Brush the inside of the silicone molds with the melted chocolate to coat them.
  • Remove any excess chocolate and refrigerate the molds for 15 minutes to set.
  • Crush the Oreo cookies in a food processor into fine crumbs.
  • In a microwave-safe bowl, melt the ½ cup of semi-sweet chocolate with the heavy cream, stirring until smooth.
  • Combine this chocolate mixture with the crushed Oreo cookies.
  • Add the Oreo and chocolate mixture into the chocolate-coated molds.
  • Press gently to level the mixture, and insert sticks into the molds.
  • Refrigerate until slightly set.
  • Pour the remaining melted semi-sweet chocolate over the top to seal the cakesicles.
  • Refrigerate until set.
  • Remove the cakesicles from the molds.
  • Decorate as you wish and serve.
