Ingredients

  • Add the milk and bay leaves to a large pot.
  • Bring to a simmer over medium heat.
  • Remove from the heat.
  • Discard the bay leaves.
  • Melt the butter with oil in another pot over medium heat.
  • Add the onion.
  • Saute for 5 minutes or until translucent.
  • Stir in the flour and cook for a 1-2 minutes or until golden brown.
  • Slowly pour in the hot milk, stirring well to combine and dissolve the flour into the liquid.
  • Add the milk onion mixture and cilantro to a blender and blend until smooth.
  • Return the cilantro mixture to the pot.
  • Add the chicken broth and heavy cream.
  • Bring to a boil over medium heat.
  • Remove from the heat.
  • Stir in the white pepper.
  • Season to taste with salt and serve.

Notes

  • Feel free to add a protein of your choice to make this cilantro soup more filling.
