  • Finely mince red onion, garlic, red chili, cilantro and parsley and add to a small bowl.
  • Add the lime juice, vinegar and olive oil.
  • Season to taste with salt and black pepper.
  • Use immediately or refrigerate until ready to use.
  • Chimichurri will keep up to 4 days in a sealed jar in the fridge.


Serve cilantro chimichurri alongside grilled steak, chicken, fish, or roasted vegetables.
