- Marinate. Mix coconut milk, curry powder, sugar, red curry paste, and salt. Add chicken and coat. Refrigerate for 1 hour.

To Make Ahead: Marinating the chicken for as long as possible will improve the flavors. To make the satay ahead, marinate the chicken one to two days in advance.
To Freeze: Prepare the marinade and pour it into a freezer-safe bag. Add the chicken, remove all the air, and freeze it for up to three months. Defrost and cook as usual.


Chicken Satay

Ingredients
For the chicken satay skewers:
- ¼ cup coconut milk
- 1 tbsp curry powder
- 1 tsp sugar
- 2 tsp red carry paste
- 1 tsp salt
- 1 ½ pound chicken breast, cut into 1 inch pieces
For the peanut butter sauce:
- 2 tbsp red curry paste
- ¾ cup natural creamy peanut butter
- ¼ cup white sugar
- 2 tsp dark soy sauce
- 1 tsp salt
- 2 tbsp cider vinegar
- 3/4 cup water
- 1 ½ cup coconut milk
Instructions
- To make the marinade, add the coconut milk, curry powder, sugar red carry paste and salt to a bowl and stir to combine.
- Add the chicken and stir to coat.
- Cover and refrigerate.
- Marinate for minimum one hour.
- Thread the chicken onto skewers.
- Grill over medium heat, 3 minutes per side or until golden.
- To make the sauce, add all the ingredients to a saucepan.
- Stir over medium low heat until smooth.
- Simmer for 5 minutes.
- Remove from the heat but keep warm while cooking the chicken.
