How to Make Caesar Chicken Pasta Salad

  1. Make the Dressing. Blend Dijon mustard, lemon juice, Worcestershire sauce, mayo, garlic, anchovy, and Parmesan until smooth.

  2. Cook Ingredients. Boil pasta until al dente, rinse and cool. Cook bacon until crispy, then crumble. Prepare chopped romaine and cooked chicken.

  3. Assemble the Salad. In a large bowl, mix pasta, romaine, chicken, bacon, and croutons. Add dressing, toss well, top with Parmesan, and serve.

Make-Ahead and Storage Instructions

To Make-Ahead: Prepare the dressing and cook the pasta, bacon, and chicken. Store them separately in the fridge. Chop the romaine just before serving to keep it crisp. Assemble the salad and toss with dressing right before serving for the best texture.

Ingredients 

For the dressing:

  • 2 tsp Dijon mustard
  • 2 tbsp fresh lemon juice
  • 2 tsp Worcestershire sauce
  • ¾ cup mayonnaise
  • 2 tsp minced garlic
  • 1 anchovy fillet
  • cup finely grated Parmesan cheese

For the pasta salad:

  • 8 oz uncooked pasta of your choice
  • 2 hearts of romaine, chopped
  • 1 cup chopped or shredded rotisserie chicken
  • 6 slices bacon
  • croutons, optional
  • Parmesan cheese shavings, for serving

Instructions 

  • In a blender or food processor, combine the Dijon mustard, lemon juice, Worcestershire sauce, mayonnaise, garlic, anchovy fillet, and grated Parmesan.
  • Blend until smooth and creamy.
  • Cook the pasta al dente according to package instructions.
  • Drain and rinse under cold water to cool, then set aside.
  • Cook the bacon in a skillet until crispy.
  • Transfer to a paper towel-lined plate to drain, then chop or crumble once cooled.
  • In a large bowl, combine the cooked pasta, chopped romaine, chicken, bacon, and optional croutons.
  • Pour the dressing over the salad and toss to coat evenly.
  • Top with Parmesan shavings and serve immediately.
