Cherry Tomato Confit Pasta (Addictive, Healthy and Oh So Good)

  1. Preheat the oven to 275°F.
  2. Line a baking sheet with aluminum foil. 
  3. Arrange the cherry tomatoes on a sheet pan in a single layer.
  4. Add the garlic and thyme leaves. 
  5. Drizzle with olive oil. 
  6. Toss to coat. 
  7. Season to taste with salt and black pepper. 
  8. Roast the tomatoes in preheated oven for 1 ½  to 2 hours or until the skin softens and begins to burst.
  9. Cook the pasta according to the packet instructions.
  10. Combine the pasta and tomato confit. 
  11. Season to taste with salt and black pepper. 
  12. Sprinkle with extra fresh thyme leaves and serve.
