How to Make a Cajun Shrimp Boil

  1. Season Broth and Boil Ingredients. Fill a large pot with water and add Cajun seasoning, Old Bay, onion, lemon, garlic, and celery. Bring to a boil, then add potatoes (10 min), sausage and corn (5 min), and finally shrimp (3–5 min) until pink. Drain.

  2. Make Garlic Butter Sauce. Melt butter in a small saucepan, then stir in garlic powder, lemon juice, Old Bay, Cajun seasoning, and smoked paprika. Cook 1–2 minutes until fragrant.

  3. Toss & Serve. Pour sauce over the shrimp boil, toss to coat, sprinkle with parsley, and serve hot with lemon wedges.

Make-Ahead and Storage Instructions

To Make-Ahead: Boil the potatoes, sausage, and corn up to 1 day in advance. Store them in an airtight container in the refrigerator. When ready to serve, reheat in the seasoned broth, add shrimp to cook, then toss with the garlic butter sauce. NOTE: While this is possible to do, and is still tasty, I recommend doing your boil when you will be eating it immediately after cooking.

To Store: Place cooled leftovers in an airtight container and refrigerate for up to 2 days. Reheat gently on the stovetop with a splash of water or broth to keep everything moist.

Ingredients 

  • 3 quarts water
  • 3 tablespoons Creole Cajun Seasoning– homemade or store-bought
  • 1 tablespoon Old Bay seasoning
  • 1 medium yellow onion, cut into wedges
  • 1 large lemon, cut into wedges plus extra for serving
  • 1 head of garlic, halved
  • 3 celery sticks, cut into 3 inch pieces
  • 1 bay leaf
  • 1 pound baby red potatoes, halved if large
  • 12 ounces andouille sausage, cut into 1 inch pieces
  • 3 ears corn, shucked and cut into 3-inch pieces
  • 1 ½ lbs medium shrimp, deveined, shell-on or peeled

For the garlic butter sauce:

  • 2 sticks unsalted butter
  • 1 ½ tsp garlic powder
  • 1 tbsp lemon juice, freshly squeezed
  • ½ tbsp Old Bay seasoning
  • ½ tbsp fresh chopped parsley
  • ½ tsp Creole Cajun Seasoning– homemade or store-bought
  • ½ tsp smoked paprika

Instructions 

  • Fill a large pot with 3 quarts of water.
  • Add the Creole Cajun seasoning, Old Bay seasoning, onion wedges, lemon wedges, garlic halves, and celery pieces.
  • Bring the seasoned water to a rolling boil.
  • Add the baby red potatoes and cook for 10 minutes.
  • Add the sausage and corn, and boil for another 5 minutes.
  • Add the shrimp and cook for 3–5 minutes, or just until they turn pink and opaque.
  • Drain everything and transfer to a large serving platter or baking sheet.
  • To make the garlic butter sauce, in a small saucepan, melt the butter over medium heat.
  • Stir in garlic powder, lemon juice, Old Bay seasoning, Creole Cajun seasoning and smoked paprika.
  • Cook for 1–2 minutes, just until the sauce is combined and fragrant, then remove from heat.
  • To serve, pour the warm garlic butter sauce evenly over the shrimp boil.
  • Toss everything gently with tongs or two large spoons until all the ingredients are well coated.
  • Sprinkle with extra chopped parsley and serve hot with lemon wedges on the side.
