- Eggs: Large eggs are ideal.
- Hot Sauce: For the most authentic cajun pickled eggs, use either Crystal Hot Sauce or Lousiana Hot Sauce, but any hot sauce will work great! I generally make these with Frank’s RedHot.
- Cajun seasoning: Either store-bought or a homemade mix.
- Vinegar: I like to use white vinegar for this recipe, but apple cider vinegar, white wine vinegar and rice vinegar will also work.

How to Make Cajun Pickled Eggs
- Make the Eggs. Throw your eggs in a small pot after the water is boiling for around 11 minutes or so, then peel.

- Make the Cajun Brine. Bring the vinegar and hot sauce to a boil, then simmer until completely combined. Let cool for 30 minutes.

- Combine Everything. Out the peeled hard-boiled eggs in a 32oz mason jar, pour the room temperature cajun brine over the eggs until they’re completely covered, sprinkling in the cajun seasoning as you go.

- Make as a cookout side dish: These spicy pickled eggs make the best cookout side dish ever! Make ahead of time and is the perfect compliment to rich grilled meats, burger and other cookout staples.
- Serve with crab boils and other seafood boils: Nothing is more cajun than a good seafood boil, and these pickled eggs are so yummy with any boiled crab, shrimp, lobster or fish.

Cajun Pickled Eggs Recipe
How to make cajun pickled eggs with hard-boiled eggs, hot sauce, white vinegar and cajun seasoning. Great as a cookout side dish or with a seafood boil.

Equipment
- 1 large 32oz jar
Ingredients
- 10 large eggs
- 1 tbsp Cajun seasoning
- 1 ¼ cups store-bought or homemade hot pepper sauce
- ½ cup white vinegar
Instructions
- Add the eggs to a saucepan of boiling water and cook for 11 minutes.
- Transfer the eggs to a bowl of iced water to cool.
- Allow to sit for 5 minutes.
- Peel and set aside.
- To make the brine, add the vinegar and hot pepper sauce to a pot.
- Stir to combine.
- Bring to a boil over high heat.
- Remove from the heat.
- Cool the brine for 30 minutes, until it reaches room temperature.
- Pack the eggs into a jar, sprinkling them with Cajun seasoning as you go.
- Pour the brine over the eggs, leaving 1/2″ of headspace.
- Close the jar with a nonreactive lid
- Gently rotate to move the seasoning around then refrigerate.
Notes
You should let these eggs pickle for at least 1 day before eating. Make sure to keep them refrigerated at all times and they will last for up to 1 month.
