How to Make Broccoli Pasta

  1. Cook the Base. Melt butter in a large pot, sauté garlic, then add chicken broth, half-and-half, and seasonings. Stir in the uncooked pasta and bring to a gentle boil.

  2. Add Broccoli & Simmer. Lower heat and simmer the pasta for 8 minutes, stirring occasionally. Then add broccoli and cook another 5–7 minutes until pasta is tender and broccoli is cooked.

  3. Finish & Serve. Stir in lemon juice and Parmesan until creamy. Adjust seasoning, garnish with parsley, and serve hot. Store leftovers in the fridge and reheat with a splash of liquid to loosen the sauce.

Make-Ahead and Storage Instructions

To Make-Ahead: Prepare the pasta and broccoli as directed, then let it cool completely. Store in the refrigerator and reheat when ready to serve.

To Store: Keep leftovers in an airtight container in the fridge for up to 2 days. Reheat gently on the stove or in the microwave with a splash of milk, broth, or water to loosen the sauce.

Ingredients 

  • 4 tbsp butter
  • 4 garlic cloves, minced
  • 2 cups chicken broth
  • cups half-and-half
  • ¼ tsp onion powder
  • ¼ tsp dried thyme
  • ½ tsp dried oregano
  • ½ tsp dried parsley
  • ½ pound uncooked pasta
  • cups broccoli florets
  • 1 tbsp lemon juice
  • ¾ cup grated Parmesan cheese, plus extra for serving
  • 2 tbsp chopped parsley

Instructions 

  • In a large pot or deep skillet, melt the butter over medium heat.
  • Add the minced garlic and sauté for 1–2 minutes, until fragrant.
  • Pour in the chicken broth and half-and-half. Stir in the onion powder, thyme, oregano, and parsley.
  • Add the uncooked pasta and bring the mixture to a gentle boil.
  • Reduce the heat to a simmer and cook uncovered for about 8 minutes, stirring occasionally.
  • Add the broccoli florets and cook for another 5–7 minutes, or until the pasta is al dente and the broccoli is tender.
  • Stir in the lemon juice and grated Parmesan cheese. Mix until the cheese is melted and the sauce is creamy.
  • Taste and adjust seasoning if needed.
  • Sprinkle with chopped parsley and serve immediately with extra Parmesan on top.
