Bread and Butter Refrigerator Pickles (Sweet and Tangy)

  1. In a large bowl combine the cucumber and salt. 
  2. Cover and chili for 1 ½ hours. 
  3. Rinse under cold water and drain well. 
  4. Toss the cucumbers with onion. 
  5. Add the white vinegar, apple cider vinegar and brown sugar to a saucepan. 
  6. Bring to a simmer over medium heat and cook until the sugar dissolves. 
  7. In a jar pack the cucumber and onion. 
  8. Pour the vinegar mixture over the cucumbers. 
  9. Put the lid on. 
  10. Refrigerate for at least 2 days before eating. 
  11. Store in the fridge for up to 1 month.
