Instructions

  1. Preheat oven to 425ºF. 
  2. In a bowl combine the blueberries, lemon juice, lemon zest, 2 tablespoons of melted butter and 2 tablespoons of sugar. 
  3. Lightly grease 9 inch cake pan with melted butter. 
  4. Line bottom of the pan with a circle of parchment paper. 
  5. Transfer the mixture into the cake pan. 
  6. Bake the blueberries in preheated oven for 40 minutes. 
  7. Remove from the oven and allow to cool. 
  8. Reduce the oven temperature to 350°F. 
  9. In a bowl combine the flour, baking powder, salt and baking soda. 
  10. In another bowl beat the eggs with remaining sugar. 
  11. Add the remaining melted butter, lemon zest and sour cream and beat to combine. 
  12. Add the flour mixture and mix to combine. 
  13. Pour the batter over the blueberries. 
  14. Bake in preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  15. Remove from the oven. 
  16. Let the cake cool in pan for 10 minutes.
  17.    Cover the pan tightly with a serving dish and invert so that the blueberry side is up.
  18.    Allow to cool completely before serving. 
  19.    Serve with whipped cream.
