OMG-Good Sour Cream Blueberry Bread (with Lemon Glaze)

For the bread:
- 2 cups plus 2 tsp all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 2 large eggs
- 1 cup granulated sugar
- 1 cup sour cream
- ½ cup vegetable oil
- 2 tbsp fresh lemon juice
- Zest of 1 lemon
- 2 tsp vanilla extract
- 1 cup blueberries, fresh or frozen
For the glaze:
- 1 cup confectioners sugar
- 2 tbsp fresh lemon juice
- Preheat oven to 350ºF.
- Line an 8×4 inch loaf pan with parchment paper. Set aside.
- In a bowl add the blueberries and 2 teaspoons of flour and toss to coat. Set aside.
- In a bowl combine the remaining flour, baking powder and salt. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment beat the eggs and sugar until pale and fluffy, about 3-5 minutes.
- Add the sour cream, oil, lemon zest, lemon juice and vanilla extract and beat until well combined.
- Add in the flour mixture and beat until smooth.
- Gently fold in the blueberries.
- Transfer the batter into the prepared pan.
- Bake in preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and allow to cool completely.
- To make the glaze, in a bowl combine the lemon juice and confectioners sugar.
- Drizzle the glaze over the bread.
