How to Make Homemade Blackberry Popsicles

  1. Combine the ingredients. Add the blackberries, sugar and lemon juice to a bowl.
  2. Mash. Mash the blackberries with a potato masher.
  3. Dissolve. Stir until the sugar dissolves.
  4. Make the base. Add the Greek yogurt to a bowl. Fold in the blackberry syrup.

  5. Divide. Divide the mixture between 6 popsicle molds.
  6. Freeze. Insert the popsicle sticks and freeze for 3-4 hours.

Greek Yogurt Alternatives for Homemade Popsicles

  • Banana Puree – Bananas are a great alternative to ice cream as they are naturally sweet and creamy. Once the bananas are frozen, you can blend the bananas in a food processor or blender until they reach a smooth, ice cream-like consistency which you can then use for your Blackberry Popsicles.
  • Coconut Milk – Coconut milk is a great high-fat base for your Blackberry Popsicles. To make it even yummier, combine full-fat coconut milk, sugar, vanilla extract, and salt in a blender or food processor and blend until smooth.
  • Avocado Puree – Similar to banana puree, avocado puree is another great alternative to Greek yogurt except avocado is higher in fat, so it yields a creamier finished product—perfect for these Blackberry Popsicles. You may need to add more sugar to the recipe since avocado puree isn’t as sweet as Greek yogurt.
  • Heavy Whipping Cream – For extra rich and creamy Blackberry Popsicles, you can’t go wrong with heavy whipping cream. Simply whip the heavy whipping cream with a stand mixer and fold it into your recipe.

  • 6 oz fresh blackberries
  • 2/3 cup granulated sugar
  • 1 tbsp lemon juice
  • 2 cup plain Greek yogurt

Instructions 

  • Add the blackberries, sugar and lemon juice to a bowl.
  • Mash the blackberries with a potato masher.
  • Stir until the sugar dissolves.
  • Refrigerate the blackberry syrup for 60 minutes.
  • Add the Greek yogurt to a bowl.
  • Fold in the blackberry syrup.
  • Divide the mixture between 6 popsicle molds.
  • Insert the popsicle sticks and freeze for 3-4 hours.

Notes

Why Are My Popsicles Not Coming Out?
There’s nothing worse than eagerly pulling on the popsicle stick only to find that your frozen treat is stuck in the mold. Here are some reasons why and how to potentially avoid them:
  • Your popsicles need to thaw a bit before coming out of the mold. This is a safe bet for most popsicle molds, so to avoid any mishaps such as accidentally yanking the stick out, just leave it out for a few minutes to soften.  
  • Use a silicone mold instead of a hard plastic one. It may be more difficult to remove the popsicles from hard plastic molds, so stick to a silicone mold since it’s pliable and easier to manipulate.
  • They need more time to freeze. It can be exciting to make Blackberry Popsicles, especially during the warmer months, but patience is key with this recipe. You don’t want to take them out before they’re ready.
