These light and fluffy homemade, glazed lemon blackberry donuts are the perfect snack to make mornings or evenings. They’re baked, not fried, making them a healthier alternative to the conventional donut.

How to Make Baked Glazed Blackberry Donuts

  1. Combine the dry ingredients. In a bowl of stand mixer fitted with a dough hook combine the flour, yeast and sugar.
  2. Add some of the liquid ingredients. Add the milk, egg yolks, vanilla extract and beat until combined.
  3. Add the rest of the ingredients. Add the butter, lemon zest and heavy cream and beat for 8 minutes or until soft dough forms.
  4. Prepare the bowl. Lightly grease a large bowl with oil. Transfer the dough into the bowl.

  5. Let dough rise. Cover with plastic wrap and leave to rise in a warm place for 1 hour or until doubled in size.
  6. Prepare the baking sheet. Line a baking sheet with parchment paper or silicon mat.
  7. Transfer the dough. Transfer the dough onto a lightly floured surface.
  8. Roll and cut the dough. Roll out the dough to ½ inch thick. Use a donut cutter or 2 cookie cutters to cut the donuts. Re-roll any scraps to make more donuts.

  10. Let rise. Set aside for 30 minutes or until risen.
  11. Preheat oven. Preheat oven to 350ºF. Bake in preheated oven for 10-12 minutes or until golden.
  12. Remove. Remove from the oven and set aside.
  13. Make the glaze. Add the blackberries, lemon zest, sugar and ½ cup water to a saucepan.

  14. Simmer. Bring to a simmer and cook for 10 minutes.
  15. Transfer. Transfer the mixture to a blender and blend until smooth.
  16. Add the ingredients. Add the blackberry mixture, powder sugar, butter and 1 tablespoon of boiling water to a bowl and stir to combine.
  17. Dip. Dip the top halves of the doughnuts into the icing.

  18. Let set. Set aside for 5 minutes or until the icing has set before serving.

6 Tips for Making Homemade Donuts

  • Use a light hand when mixing the dough. Be careful not to overmix the dough. Just mix everything until the ingredients are combined.
  • Let the dough rest. This will give the gluten a chance to relax, resulting in tender donuts.
  • Roll the dough out to ½-inch thickness. You can play around with this up to a certain point, but keep in mind that thick donuts will be too dense, while thinner donuts may be too fragile.

How to Make Homemade Donuts Without Yeast
You can actually make donuts without yeast in case you don’t have any on hand. One option is to substitute baking powder for yeast. Baking powder will help the dough rise without the need for fermentation. Alternatively, you could try recipes that use self-rising flour, which already contains both baking powder and salt.
Another option is to experiment with sourdough starter, which can add an interesting tang to your donuts.
