How to Make Beet Salsa

  1. Roast the Beets. Preheat the oven to 400°F. Wrap the beets in foil and place them on a baking sheet. Roast for about 45 to 60 minutes, or until they’re tender renough to pierce with a fork. Let them cool a bit, then peel and dice them into small pieces.

  2. Mix the Ingredients. In a medium bowl, combine the diced beets with the chopped jalapeno, diced apple, lime juice, chives, and a drizzle of olive oil. Give it a gentle stir so everything gets coated evenly.

  3. Season and Serve. Sprinkle in a little salt to taste and mix again. You can serve it right away, or chill it for about 10 to 15 minutes if you like it a bit colder.

Make-Ahead and Storage Instructions

To Make-Ahead: You can roast and dice your beets a couple of days early. You can mix them with everything else except the lime juice (save that for right before serving!).

To Store: I just put the beet salsa in a sealed container and keep it in the fridge. It stays good for 2-3 days. Before eating, I like to stir it up and squeeze in a bit more lime to bring the acidity back into the salsa.

Ingredients 

  • 10 oz beets
  • 2-3 jalapeno peppers, seeded and minced
  • 1 small tart apple, cored and diced
  • 2 tbsp lime juice
  • 2 tbsp fresh chives, minced
  • 2 tbsp extra virgin olive oil
  • salt to taste

Instructions 

  • Preheat oven to 400°F.
  • Wash the beets thoroughly.
  • Wrap each beet in aluminum foil.
  • Place the wrapped beets on a baking sheet.
  • Roast for 45–60 minutes, until tender when pierced with a fork.
  • Remove from oven and let cool slightly.
  • Peel the skin off the beets.
  • Dice the roasted beets into small cubes.
  • Place the diced beets in a medium bowl.
  • Add the minced jalapeno, diced apple, lime juice, and chives.
  • Drizzle with olive oil.
  • Season with salt to taste.
  • Stir gently to combine.
  • Serve immediately or chill for 10–15 minutes.
