- 1 cup heavy whipping cream
- 1/2 cup whole milk
- 1 28 oz can peeled whole tomatoes or crushed tomatoes
- ½ tsp dried thyme
- 1 tsp sugar
- 1 cup water
- 2 cups fresh basil
- salt and fresh ground black pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and cook until soft.
- Add the garlic and cook for 30 seconds.
- Whisk in the flour until combined.
- Slowly pour in the milk and heavy whipping cream, while stirring.
- Simmer, stirring frequently until it’s thickened.
- Add the tomatoes, water, dried thyme and sugar and stir to combine.
- Simmer for 15 minutes.
- Transfer the soup to a blender.
- Add the fresh basil and blend until smooth.
- Return the soup in the pot.
- Season to taste with salt and black pepper.
- Bring the mixture to simmer and cook for 5 minutes.
