How to Make Banana Muffins with Applesauce

  1. Prepare the dry mix: Combine the flour, baking powder, baking soda and salt. Set aside.

  2. Prepare the wet mix: Using an electric mixer, beat the egg and honey until they are pale.  Add the mashed banana, applesauce, avocado oil, and vanilla extract and beat to combine.

  3. Make the batter: Add the dry mixture to the wet mix and beat until well mixed. Scoop the applesauce muffin batter into the prepared muffin cups.

  4. Bake: Bake in preheated oven for 25 to 30 minutes or until a toothpick inserted into the center comes out clean. Remove the applesauce muffins from the oven and allow them to cool completely.

Freezing and Thawing Instructions

To Freeze: Wrap each applesauce muffin in plastic wrap. Place the wrapped muffins in a freezer-safe, airtight container and cover with a lid. Freeze until solid. These muffins will stay fresh and deliciously moist for up to three months.

To Thaw: To defrost a muffin, leave it wrapped and let it sit out on the counter for one to two hours to thaw fully. You can also rewarm the muffins in the microwave. To heat, unwrap the muffin, then place it on a plate. Microwave the applesauce muffin on high for 30 seconds until completely defrosted and warmed through.

Ingredients 

  • 1 1/3 cups spelt or whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 large egg
  • 3 large very ripe bananas, mashed
  • ½ cup unsweetened applesauce
  • ¼ cup honey
  • 3 tbsp avocado oil
  • 1 tsp vanilla extract

Instructions 

  • Preheat oven to 350ºF.
  • Line a 12-cup muffin pan with paper cups. Set aside.
  • Combine the flour, baking powder, baking soda and salt. Set aside.
  • Using an electric mixer, beat the egg and honey.
  • Add the mashed banana, applesauce, avocado oil and vanilla extract and beat to combine.
  • Add the flour mixture and beat until incorporated.
  • Scoop the batter into the prepared muffin cups.
  • Bake in preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and allow to cool completely.
  • To freeze the muffins, wrap each muffin in plastic wrap.
  • Place in an airtight container and cover with a lid.
