How to Make Banana Fritters

  1. Make the Batter. Mash the bananas in a medium bowl until smooth. Stir in the vanilla, brown sugar, nutmeg, and a pinch of salt. Add the flour and baking powder, mixing until a thick, sticky batter forms.

  2. Fry the Fritters. Heat oil in a deep pan to around 350 to 360°F. Carefully drop spoonfuls of the batter into the hot oil and fry for about 2 to 3 minutes per side, until golden brown. Try not to crowd the pan so they cook evenly.

  3. Drain and Serve. Use a slotted spoon to lift the fritters out and set them on paper towels to drain. Dust lightly with powdered sugar and serve them warm.

Quick Note: I burnt the first batch once cause I got distracted, so maybe keep an eye on them while frying!

Make-Ahead, Storage and Freezing Instructions

To Make-Ahead: Sometimes I make the batter the night before and put it in the fridge for the next day. It gets thicker overnight, so I just give it a quick stir before frying. Works out just fine.

To Store: Leftover fritters don’t last long around here, but if I do have some, I just keep them in a sealed container in the fridge. They’re still good for a couple days. I like to reheat them in a skillet so they get that bit of crisp back. Your microwave works too, but they won’t be as good as using a skillet.

To Freeze: When I make extra, I freeze the cooked fritters on a tray first so they don’t all stick together. Once they cool down a bit, I move them to a freezer bag and squeeze out the air. They keep pretty well, but I’ve never timed it exactly. I usually eat them the next week, haha. But I would say they would probably keep for about 4 weks. I just reheat them straight from frozen in the oven until they’re warm and golden again. Tastes pretty close to fresh though!

Southern Banana Fritters

Ingredients 

  • 3 ripe bananas medium size
  • 1 tsp vanilla extract
  • ½ tsp nutmeg
  • 3 tbsp brown sugar
  • pinch of salt
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • oil for frying
  • powdered sugar for dusting

Instructions 

  • Mash the bananas in a bowl.
  • Add the vanilla extract, brown sugar, nutmeg, and a pinch of salt.
  • Mix well.
  • In a small bowl, whisk together the flour and baking powder.
  • Add the flour mixture to the banana mixture.
  • Stir gently until combined into a thick batter.
  • Pour the oil into a deep pot until it is about 1 inch deep.
  • Heat the oil to 350–360°F.
  • Drop spoonfuls of the batter into the hot oil.
  • Fry until golden brown, about 2–3 minutes per side.
  • Remove with a slotted spoon and drain on paper towels.
  • Dust with powdered sugar.
  • Serve warm.
