How to Make Baked Spaghetti Squash
If you’re wondering how long you need to roast fork tender spaghetti squash, you should have the spaghetti squash in your oven for at least 45 minutes (otherwise it will be undercooked).
- Prep the Spaghetti Squash. Cut the spaghetti squash in half, scoop out seeds, and drizzle with olive oil. Add the rest of the seasonings.


- Bake Until Fork Tender. Place cut-side up on a baking sheet and bake at 375°F for 45–55 minutes until fork tender.
- Wait and Enjoy. Let cool slightly, then use a fork to scrape squash into spaghetti-like strands. Serve warm.
Make-Ahead and Freezing Instructions
To Make-Ahead: Bake the spaghetti squash, scrape into strands, and let cool. Store in an airtight container in the fridge for up to 2 days before reheating.
To Freeze: Portion cooled squash strands into freezer-safe bags or containers. Freeze for up to 3 months. Thaw overnight in the fridge and reheat before serving.

- 1 spaghetti squash
- 2 tbsp extra-virgin olive oil
- 2 garlic cloves, sliced or minced
- sea salt and fresh ground black pepper
Instructions
- Preheat oven to 375ºF.
- Cut the spaghetti squash in half, lengthwise.
- Scoop out the seeds and ribbing.
- Drizzle the inside of the squash with olive oil.
- Sprinkle with sliced or minced garlic.
- Season with sea salt and black pepper.

- Remove from the oven and allow to cool for 15-20 minutes.
- Use a fork to scrape out the squash meat from each half.
