How to Make Baked Cod

  1. Make the Mango Salsa. Mix diced mango, red bell pepper, green onions, jalapeño, lime juice, and olive oil in a bowl. Set aside to let the flavors blend.

  2. Bake the Cod. Preheat oven to 400°F. Place cod fillets in a greased baking dish, season with paprika, salt, and pepper, then drizzle with olive oil. Bake for about 20 minutes, until the fish flakes easily.

Storage and Freezing Instructions

To Make-Ahead: Mango salsa can be made up to 1 day ahead and stored in the fridge in an airtight container. The cod can be seasoned and prepped a few hours in advance; cover and refrigerate until ready to bake. For best texture, bake the cod just before serving.

To Store: Leftover baked cod can be stored in the fridge for up to 2 days in an airtight container. Mango salsa will keep for 1–2 days, but is best fresh. Reheat the cod gently in the oven or microwave. Add fresh lime juice or salsa after reheating to refresh the flavor.

Ingredients 

  • 1 mango, peeled and diced
  • ½ red bell pepper, diced
  • 2 green onions, chopped
  • 1 jalapeno pepper seeds removed, finely diced
  • 1 lime juiced
  • 2 tbsp olive oil
  • 4 cod filets, about 5 ounces each
  • ½ tsp paprika
  • salt and ground black pepper to taste

Instructions 

  • In a bowl, combine the diced mango, red bell pepper, green onions, jalapeno, lime juice, and olive oil.
  • Mix well and set aside to let the flavors meld together.
  • Preheat your oven to 400°F.
  • Lightly grease a baking dish with 1 tablespoon of olive oil.
  • Place the cod fillets in the prepared baking dish
  • Sprinkle each cod fillet with paprika, salt, and black pepper.
  • Drizzle the fillets with remaining olive oil
  • Bake the cod in the preheated oven for 20 minutes, or until the fish flakes easily with a fork.
  • Once the cod is done, remove it from the oven and serve it topped with the mango salsa.
