  2. Make the sauce and slow cook. Whisk together French dressing, apricot preserves, onion soup mix, and thyme. Add chicken to slow cooker, cover with half the sauce, and cook on LOW for 8 hours.

  3. Finish under the broiler. Transfer chicken to a baking sheet, top with remaining sauce, broil for 1–2 minutes until bubbly and caramelized, then serve.

Ingredients 

  • 5 chicken thighs, bone in and skin on
  • 1 tbsp vegetable oil
  • 1 packet dry onion soup
  • 1 cup French dressing
  • 1 cup apricot preserves
  • 1 tbsp fresh thyme leaves
  • salt and black pepper to taste

Instructions 

  • Season the chicken with salt and black pepper to taste.
  • Heat the oil in a large skillet over medium heat.
  • Add the chicken and cook 3-5 minutes per side or until golden.
  • Remove from the heat.
  • In a bowl add the French dressing, apricot preserves, onion soup and thyme and whisk to combine.
  • Add the chicken to a slow cooker.
  • Cover with half of apricot mixture.
  • Cover with a lid and cook for 8 hours on LOW.
  • Remove the chicken to a baking sheet.
  • Cover with remaining sauce.
  • Broil for 1-2 minutes or until bubbly and caramelized.
