- Make the dry mix: Add the flour, baking powder, salt, and cinnamon together and whisk to combine. Set aside.

- Make the batter: Using a handheld or electric mixer beat the eggs until fluffy. Add the applesauce, oil, milk, and vanilla extract and beat to combine. Add the dry mix and beat until just combined. Do not overmix.


- Prepare the waffles: Preheat the waffle iron and coat it generously with extra oil. Pour just enough waffle batter into the bottom of the iron to cover it; do not overfill. Cook for five to seven minutes or until golden brown.

Freezing and Thawing Instructions
To Freeze: Allow the waffles to cool to room temperature. Wrap each waffle in plastic wrap, stack them, and freeze until solid. Once the waffles are frozen, transfer them to a freezer bag to keep them together and out of the way.
To Thaw: Take the waffle out of the freezer and, leaving it wrapped, let it defrost on the counter for an hour or two or until fully thawed. To speed things up, you can also rewarm the waffles in the microwave. Just unwrap them and place them on a plate. Microwave them on high for 30 seconds or until warmed through. Lastly, you can simply pop them into the toaster and let them toast until fully defrosted and warmed through.

- 2 ¼ cups all purpose flour
- ½ tsp salt
- 1 tsp cinnamon
- 1 tbsp baking powder
- 2 large eggs
- ½ cup applesauce
- ¼ cup vegetable oil plus extra for greasing
- 1 ½ cups milk
- 1 tsp vanilla extract

- To thaw, leave the waffles wrapped and let it sit out on the counter for one to two hours to fully thaw.
- You can also rewarm the waffles in the microwave.
- Place waffles on a plate and microwave on high for 30 seconds.
