How to Make Healthy Applesauce Oatmeal Muffins

  1. Make the dry mix: Mix the flour, baking powder, baking soda, cinnamon and salt. Set aside.

  2. To make the batter: Using a handheld or electric mixer, beat the egg and sugar. Add the applesauce, milk, butter, and vanilla extract and beat to combine. Add the dry mixture and beat until there’s no powder left. Fold in rolled oats and raisins.

  3. Bake: Use a scoop to distribute the batter between the prepared muffin cups. Sprinkle with extra rolled oats. Bake for 15 to 20 minutes or until a toothpick pushed into the middle of the muffin comes out clean. Remove the oatmeal muffins from the oven and leave them to cool in the pan.

Freezing and Thawing Instructions

To Freeze: Oatmeal muffins can be frozen for up to three months. Just wrap each muffin in plastic wrap. Place them in an airtight container and cover it with a lid. Freeze until solid.

To Thaw: Take the muffin out of the freezer and leave it wrapped. Let it sit out on the counter for one to two hours to thaw fully. You can also rewarm the muffins in the microwave. Place the unwrapped frozen muffin on a plate and microwave on high for 30 seconds until warmed through.

Healthy Applesauce Oatmeal Muffins

Try these easy, super tasty applesauce oatmeal muffins. They're quick and make the perfect healthy snack.

Servings: 12 muffins

Ingredients 

  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • ¾ tsp baking soda
  • 1 tsp ground cinnamon
  • pinch of salt salt
  • 1 large egg
  • 1/3 cup granulated sugar
  • 1 ¼ cups unsweetened applesauce
  • ½ cup milk
  • ¼ cup butter, melted
  • 1 tsp vanilla extract
  • 1 ¼ cups old-fashioned rolled oats plus extra for decoration
  • ½ cup raisins

Instructions 

  • Preheat oven to 375ºF.
  • Line a 12-cup muffin pan with paper cups. Set aside.
  • Combine the flour, baking powder, baking soda, cinnamon and salt. Set aside.
  • Using an electric mixer, beat the egg and sugar.
  • Add the applesauce, milk, butter and vanilla extract and beat to combine.
  • Add the flour mixture and beat until incorporated.
  • Fold in rolled oats and raisins.
  • Scoop the batter into the prepared muffin cups.
  • Sprinkle with extra rolled oats.
  • Bake in preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and allow to cool completely.
  • To freeze the muffins, wrap each muffin in plastic wrap.
  • Place in an airtight container and cover with a lid.
  • Freeze until solid.
  • To thaw, leave the muffin wrapped and let it sit out on the counter for one to two hours to fully thaw.
  • You can also rewarm the muffins in the microwave.
  • Place unwrapped frozen muffin on a plate and microwave on high for 30 seconds.
