How to Make Applesauce Muffins Without Oil

  1. Mix it: Combine the flour, sugar, salt, baking soda, baking powder, and cinnamon.

Thawing and Freezing Instructions

To Freeze: Wrap each applesauce muffin in plastic wrap. Place them in a freezer-safe container and cover with a lid. Freeze until solid.

Ingredients 

For the muffins:

  • 1 cup spelt flour
  • ¼ cup sugar
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp cinnamon
  • 1 ¼ cup applesauce
  • 2 tbsp milk
  • 2 tsp vanilla extract
  • 2 tsp white vinegar

For the crumble topping: 

  • 1 cup rolled oats
  • 1/4 cup almond flour
  • 1/3 cup chopped pecans
  • 1/4 cup brown sugar
  • ½ tsp ground cinnamon
  • pinch of salt
  • 3 tbsp honey

Instructions 

  • Preheat oven to 350ºF.
  • Line a 12-cup muffin pan with paper cups. Set aside.
  • In a bowl, combine the flour, sugar, salt, baking soda, baking powder and cinnamon.
  • In another bowl, add the applesauce, vinegar, milk and vanilla extract and stir to combine.
  • Add the flour mixture and stir until incorporated.
  • Spoon the batter into muffin cups.
  • To make the crumble, in a bowl combine rolled oats, almond flour, pecans, brown sugar, cinnamon and salt.
  • Add the honey and stir to combine.
  • Sprinkle the muffins with crumb topping.
  • Bake in preheated oven at 350 ºF for 25-30 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  • Remove from the oven and allow to cool completely before serving.
  • To freeze the muffins, wrap each muffin in plastic wrap.
  • Place in an airtight container and cover with a lid.
  • Freeze until solid.
  • To thaw, leave the muffin wrapped and let it sit out on the counter for one to two hours to fully thaw.
  • You can also rewarm the muffins in the microwave.
  • Place unwrapped frozen muffin on a plate and microwave on high for 30 seconds.
