How to Make Applesauce Cake with Caramel Glaze

  1. Make the dry mix: Sift the all-purpose flour, baking soda, cinnamon, ginger and salt together.

  2. Make the batter: Beat the granulated sugar, eggs, and brown sugar until pale and fluffy using a stand mixer with a paddle attachment. Add the oil, vanilla extract, and applesauce and beat until combined. Add the spiced flour and beat until all the dry powder is gone.

  3. Bake: Pour the applesauce batter into the prepared bundt pan. Bake the applesauce cake for 45 to 55 minutes or until a doneness test comes out clean, then remove it from the oven.

  4. Cool it: Cool the applesauce cake in the pan for ten minutes to allow it to firm up, then carefully invert it onto the cooling rack.
  5. Make the glaze: Stir all the glaze ingredients together in a small bowl. Once the applesauce cake is cooled, pour the caramel glaze over it and allow it to set before slicing and serving.

Freezing and Thawing Instructions

To Freeze: Cut the cooled applesauce cake into slices. Wrap each slice tightly and freeze it. Once frozen, put them together in a ziplock bag to save space. Enjoy within three months from the baking date.

To thaw: Take one or two slices of cake out of the freezer. Let them sit out on the counter, still tightly wrapped, until completely defrosted. To reheat them, microwave on high for 30 seconds until warmed through. Keep in mind that microwaving will melt the frosting.

Applesauce Cake with Caramel Glaze

Total Time: 1 hour 10 minutes
Servings: 12 slices

Ingredients 

For the bundt cake:

  • 2 cups all-purpose flour
  • 1 ½ tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp kosher salt
  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 ½ cups unsweetened applesauce
  • 2/3 cup vegetable oil
  • 1 tsp pure vanilla extract

For the glaze:

  • 1 cup powdered sugar
  • 5 tbsp store-bought or home-made caramel sauce
  • 1 tbsp milk

Instructions 

  • Preheat oven to 350ºF.
  • Grease a 10-cup bundt pan. Set aside.
  • In a bowl combine the all-purpose flour, baking soda, cinnamon, ginger and salt.
  • In the bowl of a stand mixer fitted with the paddle attachment beat the eggs, granulated sugar and brown sugar until fluffy.
  • Add the oil, vanilla extract and applesauce and beat until combined.
  • Add the flour mixture and beat until incorporated.
  • Pour the batter into the prepared bundt pan.
  • Bake in preheated oven for 45- 55 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven.
  • Cool in the pan for 10 minutes, then carefully invert onto rack and cool completely.
  • To make the glaze, stir all the ingredients in a small bowl.
  • Pour the glaze onto cake.
  • Allow to set before slicing and serving.
  • To freeze the cake, wrap each slice in plastic wrap.
  • Freeze until solid.
  • To thaw, leave the cake wrapped and let it sit out on the counter for one to two hours to fully thaw.
