How to Make Apple Pie Bread Pudding

  1. Make Apple Filling. Cook apples with butter, flour, apple pie spice, salt, brown sugar, and water until tender and saucy. Stir in vanilla and let cool.

  2. Mix Custard & Assemble. Whisk milk, cream, eggs, melted butter, sugar, vanilla, cinnamon, apple pie spice, and salt. Layer bread cubes and apple filling in a parchment-lined baking dish, then pour the custard over everything. Rest for 30 minutes.

  3. Bake & Serve. Sprinkle with turbinado sugar and bake at 350°F for 55–65 minutes until set and golden. Let cool slightly and serve warm (ice cream optional but recommended!).

Make-Ahead and Freezing Instructions

To Make-Ahead: Assemble the bread pudding fully (including the custard soak), cover, and refrigerate for up to 24 hours. Bake when ready, adding a few extra minutes if cold from the fridge.

To Store: Keep leftovers covered in the refrigerator for up to 3 days. Reheat individual portions in the microwave or warm the whole dish in the oven until heated through.

Ingredients 

  • 14 oz brioche bread, sliced and cut into 1” cubes
  • 1 cup milk of choice
  • 1 cup heavy cream
  • 4 eggs, at room temperature
  • 2 tbsp butter, melted and slightly cooled
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp apple pie spice
  • pinch of salt
  • 1 tbsp turbinado sugar for sprinkling on top

For the filling:

  • 4 large apples, peeled and diced
  • 4 tbsp salted butter
  • 2 1/2 tbsp all-purpose flour
  • 1 tsp apple pie spice
  • large pinch of salt
  • ¾ cup brown sugar
  • ½ cup water
  • 1 tsp vanilla extract

Instructions 

  • In a skillet, melt butter over medium heat.
  • Add diced apples, flour, apple pie spice, salt, brown sugar, and water.
  • Cook until the apples are tender and a thick sauce forms.
  • Stir in vanilla and let cool slightly.
  • In a large bowl, whisk together milk, heavy cream, eggs, melted butter, granulated sugar, vanilla, cinnamon, apple pie spice, and salt.
  • Line a 9-inch round baking dish with parchment paper.
  • Arrange the bread pudding by layering: start with a layer of bread cubes, then a layer of the apple filling, repeating until you finish with the apples on top.
  • Pour the milk-egg mixture evenly over the layered bread and apples.
  • Cover and let it rest for 30 minutes.
  • Before baking, sprinkle the top with turbinado sugar.
  • Bake at 350°F for 55–65 minutes, until the pudding is set and golden.
  • Let cool slightly and serve warm, ideally with a scoop of your favorite ice cream.
